I LOVE shrimp.

They’re so simple and easy to make! There are SO many delicious recipes out there, especially on Pinterest. But my favorite shrimp recipe will always and forever be popcorn shrimp.

Popcorn shrimp are perfect to snack on while watching Netflix. Or if you like to be fancy, you can throw a cocktail party and it would be excellent appetizers.

But let’s face it, I can never just make regular popcorn shrimp. Throw some wasabi in there! Wasabi makes everything better. They’re like little bombs that set off explosion in the taste buds.

Now I know deep-frying is how one typically makes popcorn shrimp. But if you know, you’ll know that I like to stay away from deep-frying as much as possible. Let’s be honest, deep-frying scares me a bit with all that sizzling and noise…

So let’s just stay simple and healthy!

Wasabi Popcorn Shrimp

Prep: 19 Mins   |   Cooking Time: 25 Mins
Ingredients:

  • 1 cup gluten-free Panko breadcrumbs
  • 3 tablespoons grated Parmesan cheese
  • 2 teaspoons wasabi powder (or more depending on preference for spiciness)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg white, whisked
  • 1 lb. raw medium shrimp, peeled and deveined
  • cooking spray
  • lemon slices and chopped fresh cilantro, for garnish

    Directions:
    Step 1:
    Preheat oven to 350° F. Line baking sheet with parchment paper.
    Step 2:
    In a medium bowl, whisk together Panko, Parmesan, wasabi, salt and pepper until combined.
    Step 3:
    For the next part we want to be fast, set up 3 bowls of (1) shrimp (2) egg whites and (3) breading. Working on piece of shrimp at a time, dip in egg whites until it is covered completely. Then drop in breadcrumb mixture and toss, sometimes I like to shake and do a little dance to B2ST. Gently place on the prepared baking sheet. Repeat with remaining shrimp, then generously coat all of the shrimp with a layer of cooking spray. (This will help the breading turn golden.)
    Step 4:
    Bake for 3 minutes, then flip shrimp and bake for another 3 minutes or until cooked through and no longer translucent. Serve warm with garnishes and devour until there is none left and make some more!
