Baked Honey-Dijon Salmon

I realize that not everyone has patience anymore. We expect instant gratification… Especially when it involves cooking. I am no exception either, I’ll admit sometimes I have the self-restraint of a 5-year-old.

We all want instant results. Imagine living in a world where Batman takes Joker down in one quick move. No more cat and mouse game. Now take that wonderful feeling and transfer it to cooking salmon fillets.

Cooking salmon fillets CAN be quite easy or complicated depending on the dish. I know my last recipe had a very intensive recipe list but this time we only need a few ingredients. Remember, time is of essence here!

I like to imagine that even Harley Quinn would be able to make this dish while she’s planning out her next attack on Gotham. So there you go, if this recipe is “villain-approved” then it’s got to be foolproof! Doesn’t that just sound reassuring?! When has a villain ever fail before? Oh wait…

Well never mind that… I promise you that this recipe is so quick that it takes just a few minutes to prep and then some more to cook. Don’t worry, just because this recipe only takes a few minutes doesn’t mean that it lacks flavor. Trust me, this dish is so delicious that I’ve been requested to make more! The best thing about this recipe is that the oven does most of the work for you!

Sometimes I like to make this dish when right when I get home from work. Who doesn’t love a dinner that is freshly prepared?!

Well, enough of my rambling. Let’s get on with the recipe, shall we?

Baked Honey-Dijon Salmon

Prep: 5 Mins   |   Total Time: 20 Mins


  • 2 tablespoons olive oil
  • 4½ teaspoons Dijon mustard
  • 2 teaspoons honey
  • 3 teaspoons lime juice
  • 2 garlic cloves, minced
  • 2 tablespoons gluten-free panko bread crumbs
  • 2 teaspoons freshly chopped cilantro
  • 2 (4 oz) salmon fillet
  • salt and pepper, to taste
  • cooking spray
  • ½ lime, for garnish (optional)

Step 1:
Preheat oven to 400° F. Place aluminum foil and coat lightly with cooking spray.
Step 2:
Rinse salmon and pat dry. Season both sides with salt and pepper.
Step 3:
In a small bowl, stir together olive oil, mustard, honey, lime juice, and garlic. Set aside. In another bowl, mix together bread crumbs and cilantro.
Step 4:
Brush salmon fillet lightly with honey mustard mixture, sprinkle bread crumb mixture generously on top of the fillets.
Step 5:
Bake salmon for 12-15 minutes in the oven, or until it flakes easily with fork. Garnish with lime.
Step 6:
Sit back and watch Gotham while eating delicious salmon.

Recipe Notes:

  • I had seasoned panko bread crumbs on hand so I used them in this dish, which explains the darker color in the photos. (I mixed Cajun seasoning, salt and pepper in the bread crumbs)
